A magnificent champagne already at the sight, obtained exclusively from Pinot Noir grapes. The grapes are carefully selected from vineyards over 40 years old, all in biodynamic cultivation. The yeasts are exclusively indigenous and maceration proceeds for about 20 hours, partly in steel and partly in barrique. It does not undergo malolactic fermentation and is not filtered. The dosage is very low (about 3 g. Liter) and about 4,000 bottles produced per year.
A purebred champagne, certainly excellent for an exclusive aperitif, but easily able to accompany spicy dishes, medium-structured red meats or, at the same time, even red fruit desserts. In the mouth it is decidedly vinous, but with great balance and elegance like few others. Definitely a bottle to have in the cellar… when you can find it available.
