VARIETY: 65% Pinot Noir 35% Chardonnay
VINIFICATION: The fermentation of base wines takes place entirely inside barrels; the phase of refermentation in the bottle with refinement lasts much longer than the minimum required by the disciplinary and reaches 60 months on the lees in the bottle. The bottles are turned and opened by hand.
COLOR: A delicately colored garment of golden reflections, witness of the maturity of the wine but also of the Bollinger winemaking methods.
BOUQUET: The nose has a nice complexity with aromas of honey, gingerbread and cane. A beautiful aromatic depth. The fruity, spicy and floral notes of the wine respond to each other and reveal a nose of great complexity. Vineyard peach, mirabelle plum and bark.
PAIRING: Ideal with foie gras, grilled fish or fish cooked in a pan with butter, shellfish or aged cheeses. Try it with roast lamb.
TASTE: In the mouth the sip is dense and harmonious. Its creamy effervescence and its fresh structure accompany the wine up to its finish with a discrete salinity.
NOTES: More than a selection, what lies behind the decision to produce the Brut Grande Année or not is the ability to recognize the extraordinary nature of a vintage and a grape with a lot of foresight: being produced only in great vintages, these must translate into something exceptional! Vinification exclusively in small oak barrels of 20 years on average, made and restored in the Tonnellerie owned by the Maison, a treasure with over 3,500 barrels. Remuage and dégorgement are done entirely by hand, after aging on the lees in the bottle with natural cork stoppers. Its rich texture, its creamy effervescence and its delicate bitterness make it the ideal combination with refined dishes, with an aromatic profile capable of enhancing various types of cuisine. Persistent on the palate and a salty finish, make La Grande Année a point of reference, sought after by champagne enthusiasts from all over the world.
