Aging on the lees for 7 months in stainless steel (96%) and 400 l barrels. (4%) without malolactic fermentation. Resting in the cellar: 48 months. Dosage: 1.5 g / l.
After dégorgement it rests for at least another 6/12 months in the cellar before being released on the market.

materia e freschezza
un extra brut veramente di eccellenza dove materia e freschezza si fondono mirabilmente in un sorso fruttato ed agrumato per nulla esile che si chiude con una splendida mineralità.Tanta eleganza ma anche sostanza! Complimenti alla famiglia Gastaldello ed in modo particolare ad Erasmo per la costante ricerca e proposta di champagne mai banali.
