Produced in the region called Appenzell , in the northeast of Switzerland , this version is the most prestigious of those produced . Extra classification is restricted to better forms , produced strictly to raw milk from grazing animals and aged for many months in caves or in natural cellars .

In addition , throughout the aging , these forms are constantly " washed " on the surface with a brine secret enriched with herbs of the place that gives a spicy and fruity flavor unique .

Pasta remains " dark " on the palate and aromas are definitely " animals " . The flavor is rich and persistent, perfect for "lovers"!
