Often called 'the prince of Gruyères', this raw milk cheese vaccine is produced in the mountains of Savoy, mainly in the area around the village from which it takes its name. It is a hard cheese, large (the weight can vary from 20 to 70 Kg.) And produced exclusively from the milk of cows and Tarine Abondance, particularly valuable because of the quality of their milk.
The flavor and aroma characteristic of this cheese, derived from aging, which occurs in caves and in damp basements and cold, and the milk used; shows a beautiful straw color and the taste is delicate and sweet, with a decidedly fruity notes reminiscent of toasted hazelnut and not that become more intense as the length of maturation.
