Produced with raw cow's milk from cows raised on free pasture and fed exclusively with fresh forage of one production area. It shows a compact and black crust, while the inside is compact and almost crumbly, a lovely pale yellow color, with the classic holes that often gives a few drops.


The nose are obvious characteristics of dried fruit notes and the flavor is decisive, complex, rich and pronounced, due to the long maturation in caves that lasts for over a year.
