Sheep blue: produced in Tuscany, in the Pisan hills between the Pisan Maremma and the Val di Cecina with milk from free-range animals and aged for about four months. It comes with compact but soft pasta and with not abundant but well-spread blue cheeses. The result is very persuasive and elegant with a fairly soft consistency and a really pleasant persistence on the palate.
