This traditional Swiss Gruyère is manufactured in the cantons of Fribourg , Vaud and Neufchatel . It is a raw milk cheese and pasta cooked and pressed , which comes with compact texture .
The production of pasture , thanks to the variety of herbs present in these mountains , is particularly fragrant and has fruity, floral , vegetable and milk .
Excellent both as a table cheese , it is also one of the main ingredients to prepare excellent cheese fondue or hot to brown and fragrant winter soups .
