Latteria di Fagagna: an extraordinary cheese, witness of ancient values where the guiding thread is associations and social cooperation. This cheese is in fact produced by the three dairies located in the village of Fagagna, in the province of Udine: the turnaria dairy of Borgo Riolo, the social dairy of Borgo Paludo and the dairy Borgo centro. These three small dairies collect and transform the milk of the small farmers in the area, a gift of animals almost always left to pasture and in any case fed exclusively with fodder from the same area. These three dairies are therefore heirs to a dairy tradition that dates back to the late nineteenth century, precisely in 1881, when the first Friulian turnaria dairy came to life in Forni Avoltri, which followed the example of the "Milk Companies" created in Osoppo in the eighteenth century.
Latteria di Fagagna is produced exclusively with raw cow's milk selected in the same production area and obtained from animals fed with local hay. It has small holes and compact but not dry paste, of a beautiful straw color. The perfume is an excellent mix of lactic, fruity and herbaceous sensations, aspects that are confirmed also on the palate with excellent persistence and a rich and non-spicy finish.
