Cow cheese from raw milk, with a soft texture and mellow in the mouth. Nice and original to see, thanks to the thin layer of ash that bisects the shape inside.
In the mouth envelops the palate with great elegance, giving very pleasant notes, between fruity and slightly spicy.
Although it is almost a sin not to eat it as it is, is suitable for the preparation of valuable "fondue" or "raclette" particularly noble.
