Rochebaron: interesting new generation cow's milk cheese, produced in France, in the Auvergne region (Massif Central) with mountain milk. The paste is very creamy, porcelain white in color and with small marbling. Externally it shows an unusual gray-black color; its edible crust is in fact covered with a thin layer of ash. In the mouth it is very pleasant and with a good persistence where slightly sapid notes alternate with other much sweeter ones.
We offer it in half forms weighing about 300 grams.
