It ' a cheese produced seasonally with the milk of sheep and goats bred mainly in wild pasture . The milk processing acquires a particular connotation because the curds are pressed handmade baskets inside - called locally fuscelle - from which the name canestrato - up to compact it . Hard Cheese uniform , is pale yellow ( summer production ) , strong flavor and intense aromatic herbal notes .
