Interesting raw cow's milk cheese produced in mountain pastures in an area surrounded by beautiful mountains (Pale di San Martino in primis) and therefore in its finest summer version.

It has a fairly compact texture and a beautiful straw color. The rind is thin, slightly wrinkled and quite fragrant as this cheese, like its narrower "cousin", Puzzone di Moena, belongs to the "washed rind" type: during maturing it is continuously washed with water and salt.

Thanks to the fragrant milk donated by mountain pastures and the particular maturing technique, the Primiero di alpeggio acquires a very interesting scent and flavor that range from hints of pasture and aromatic herbs to other more fruity notes (ripe fruit and even toasted hazelnuts).
