Interesting raw cow's milk cheese produced on the island of Menorca (Balearic Islands), an uncontaminated place declared a Biosphere Reserve by Unesco. The flavor and aroma of this cheese are due not only to the particular breed of native cows, but also to the natural diet given by the island's fine pastures, which enjoy the sea breeze and a very favorable climate.
The proposed version is the most valuable of the three types produced: it is in fact the "curada and artesana" version, that is the most seasoned and produced manually starting exclusively from raw milk.
The internal paste has a beautiful deep straw color and is quite crumbly even if the consistency in the mouth is compact, but with soft and enveloping sensations. The flavor is rich, decisive, but never spicy and very aromatic, also due to the paprika which, combined with the oil, is sprinkled on the surface during aging.
The shape is also very original, square but with rounded corners and with characteristic streaks on the rind due to the cotton cloth with which the shapes are wrapped and hung in the first drying phase after production.
