This elegant goat cheese was created in 1984 by Fromagerie Le Pic, based in Penne, in the northwest of the Tarn Department.
It is an artisan cheese, produced with raw milk from goats raised in the same production area and then refined with a thin layer of vegetable ash.
The ash, in addition to giving a slight flavor and having a subtle aesthetic value, helps to absorb the moisture of the dough which remains "silky" on the palate.
In summary: a great goat for fans of the genre!
