The San Simón da Costa D.O.P. is an ancient and typical cheese produced in the province of Lugo, in Galicia (Spain). Made with milk from Friesian, Bruno Alpina and Rubia Gallega cows, shows pale yellow color and a soft texture. The nose is very delicate and the taste is very sweet and creamy. Very similar to Tetilla, the San Simón da Costa D.O.P. is enhanced by a mild and pleasant smoking, exclusively obtained from the bark of birch trees in the same area of production. Curious indeed is also the truncated cone shape.
