Great goat cheese produced in Selles - sur - Cher ( village of the Loire ) and protected dall'AOC since 1970. Very original from the point of view of aesthetics as it comes in small round molds with edible crust wrinkled and gray- black ; this is due to coal ash with which the cheese is covered just produced . The action of the ash and the seasoning positively transform this delicious cheese that is dominated by hints from young goats typically slightly sour , but when refined assumes great personality and elegance .
