It is a blue cheese produced from the middle of the last century , following the same production technique reserved for the most famous Stilton . The unique color " orange " is due to the addition of annatto , a natural dye extracted from the berries of a tropical plant . Compared with Stilton , retains a consistency slightly more " buttery " on the palate , it tastes less aggressive and a final mouth with a bit of light and pleasant bitterness .


Produced with vegetable rennet .
