Tête de Moine is a swiss cheese unique in the world for the way in which it consumes : delicate " petals cheese " made with a tool knife horizontally , the typical girolle . The cheese must indeed be scraped , so release its aromas extremely complex . La tête de Moine is produced in the Jura and the Bernese Jura , the French-speaking region of Canton Bern. More precisely originates Abbey Bellelay, located in the municipality of Saicourt, in the district of Moutier. Currently, less than ten dairies in the mountain region of the districts of Freiberg mountains of Porrentruy, Moutier and Courtelary produce this cheese specialty, an art which the monks of the area already knew more than eight centuries ago.
