The sturgeon has always been in the waters of the Amur River, the border between China and Russia.


The Kaluga Amur comes from the eggs of a hybrid species of sturgeon, Huso Dauricus obtained from female and male Acipenser Schrenkii. This is a quality very appreciated by the chef, with large and crisp eggs, clear color with shades of green and a final taste of hazelnut.
