Perciasacchi is an ancient Sicilian grain: it owes its name to its pointed shape that pierced the jute bags where it was kept. Preserved over time from manipulation, it maintains all its important nutritional characteristics: it has a low gluten content, very fragile and therefore much more digestible. The stone grinding and our production processes enhance its aromas and flavors: the right balance between nutrients and fiber make it a paste suitable for the low glycemic index diet.

For our pasta we choose only Italian cereals that we grind with stone mills for a richer flour.
