A very persuasive French goat cheese, produced in the Massif Central area and refined by Hervé Mons, considered one of the best refiners in France. On the surface it has a wrinkled edible crust with a gray-green color, due to the thin layer of ash with which it is “massaged” and to the noble molds that develop later. Internally, the paste is of a beautiful porcelain white color, creamier under the rind and more compact in the center. In the mouth it is extraordinary, enveloping and persistent, with typical goat hints and an almond aftertaste.
