Curious Cypriot cheese, here proposed in a typical three-milk version, cow, sheep and goat cheese obtained from grazing animals on the same island. A product, therefore, that differs well from large industrial productions obtained from cow's milk only, almost always imported from other areas. In addition, there is also a pleasant presence of mint which, in addition to giving a fresher and more delicate scent, also seems to improve the conservation of the product itself.

Halloumi cheese has very ancient origins: its production began in fact after the Arab invasion of Cyprus in the seventh century and the name also has Arab origins, both for the Greek and Turkish parts (from the Arabic halloum): first the Arabs they taught the Greeks to produce it and, after the Ottoman conquest of the island, the Greeks handed down the teaching to the Turks.

Halloumi is a cheese that is similar to those with spun curd, but with a greater consistency that allows it to be fried or grilled without melting completely.
