A really interesting cheese is Pyramide de Valencay, a precious raw milk goat produced in Berry, a central area of ​​France comprising in particular the department of Indre and some municipalities in the neighboring departments of Cher, Indre-et-Loire and Loir-et-Cher. In this area of ​​the Loire Valley there is also the small municipality of Valencay, to which the cheese owes its name.The Valençay is immediately interesting also at the sight with its truncated pyramid shape which is said to have been wanted by the Prince of Talleyrand; he had cut the top of the pyramid to avoid reminding Napoleon of his campaign in Egypt.

Small in size, the shape of Valencay has an edible flowery rind and a color that varies from light gray to bluish gray, thanks to the ash that covers it. The paste is compact and homogeneous, with a beautiful white porcelain color. The nose offers aromas of undergrowth, embellished with floral nuances mixed with elegant goat's notes.
