This interesting cheese produced with pure sheep's milk is also excellent for seasoning first courses and possibly replacing cow's milk cheeses such as Grana Padano D.O.P. and Parmigiano Reggiano D.O.P. where you want to vary some recipes and get new aromas and flavors.
