Nduja is an ancient sausage typical of the Poro plateau, in Calabria, and is made from minced pork and abundant hot red pepper.

It has an almost creamy consistency and is also used spread on bread, as well as in addition to sauces, or on pizzas and bruschetta. It can be served as it is or even warmed over a low heat.

In Spilinga, in the province of Vibo Valentia, on 8 August of each year a nice village festival is also dedicated to it.
