Fresh legs used for the production of this fine Italian cured meat must come from pigs born and raised in an extremely limited that includes the territory of the province of Parma, located south of the Via Emilia and, from this, to an altitude of 900m, bordered on the east by the Enza river and to the west by Stirone. The breeds used are Large White, Duroc and Landrance.

Key features of this product should be soft (even after long aging) and sweetness.
