Product in the summer months with raw cow's milk of the cows left to free grazing on the green meadows of the Vezzena Pass , between the Province of Vicenza and that of Trento , this prized cheese comes with a nice straw color , due to the large blooms dandelion in the area.
At the palate is compact but still fairly soft, with features herbal notes reminiscent of the dandelion, a plant which is particularly present in the Vezzena Pass area.
Also interesting is the long persistence in the mouth. In our area is the classic cheese to accompany polenta and mushrooms and even be enjoyed as a prized dessert.
