Produced in Barbagia, in the province of Nuoro, on the edge of the Montes forest, with raw milk from Sardinian autotctona breed sheep left to graze freely, this cheese is decidedly ancient and precious and has a compact, sometimes almost crumbly texture.

The flavor is particularly rich and engaging, with aromatic notes reminiscent of the aromatic herbs of the rich mountain pastures of Sardinia and which border on smoky sensations, a characteristic given to the cheese by the smoke of the fires lit in some maturing rooms. In addition to tableware, it is also suitable for grating on many dishes.
