The cultivation area of Zolfino is between the Arno and the slopes of Pratomagno, in Tuscany. It is a very rare product, beware of imitations!
Refined, tasty , refined and even copied, this legume has managed to survive to market that little affect the taste and quality of food.
The real Zolfino comes with its unique characteristics: small, yellow faded as sulfur and with an eyespot clearer. Despite the thin skin, it holds great cooking and, once cooked, it is thick and creamy.
